JinJu Patisserie, the Portland bakery that won the 2025 James Beard Outstanding Bakery award, soft-opens Wednesday, Oct. 21, at 3494 N Williams Ave.
The new location sits six blocks south of the original shop, inside the Carbon 12 building at North Williams Avenue and Fremont Street.
That building became the tallest mass timber structure in the United States when it was completed in 2018, according to The Oregonian.
The bakery space was previously home to a Harder Day coffee shop.
Owners Jin Caldwell and Kyurim "Q" Lee closed the original JinJu on Dec. 28, 2025, after the bakery outgrew its kitchen.
The closure came six months after the Beard win. Caldwell and Lee received more than 200 emails from fans after announcing the news, with some acting as volunteer real estate scouts, The Oregonian reported in June.
The reopening, first reported by Portland Monthly, brings a nearly doubled kitchen, custom oak tables designed by Caldwell and five new bakers. JinJu held a test run over the weekend, and customers were lined up by 7 a.m., according to the magazine.
Caldwell and Lee traveled to Seoul over the summer to research Korean salt breads, which join the menu alongside a new breakfast sandwich called the BBC. Portland Monthly has the full menu details.
One catch: JinJu's signature croissants won't be available right away. A mechanical problem with a new 10-foot Italian dough sheeter has put croissant production on hold, Portland Monthly reported.
"It's like a cream puff, but with our touch," Caldwell told Portland Monthly, describing the new salt breads.
Hours are 8 a.m. to 2 p.m. Wednesday through Sunday.
